Florencia Rodríguez is a chef. She lives and works in Tilcara, Jujuy. From the Quebrada, she shares her experiences and her particular view on this type of cuisine that she is passionate about.
Born in Buenos Aires but settled in the province almost two decades ago, she won the Prix de Baron B - Édition Cuisine 2021 for her Jujuy cuisine.
After studying Political Science, she worked in restaurants in Buenos Aires and Europe. Despite his extensive training, he considers that he arrived in Tilcara in 2003 "to learn".
Her restaurant El Nuevo Progreso is located in a historic corner of Tilcara, and looks inward, because she searches for the roots of Andean cuisine and updates them to reveal all their splendor.
