Jean was born into the hospitality industry. French with Vietnamese heritage, his parents had several restaurants in France; Jean started bussing tables and plating dishes when he was just five years old. Toward the end of 2013 he moved from Paris to Cartagena de Indias and six months later opened a pop-up bar in the bohemian neighborhood of Getsemaní - his first foray into the world of Colombian hospitality. Three years later, in 2016, Jean opened Alquímico in the historic heart of Cartagena. Starting initially with just five teammates, the three-story mansion space continued to grow and expand; today, more than 60 people - including 16 bartenders - work with Alquímico. Today, it’s considered one of the best High Volume Bars in the Americas, according to Tales of the Cocktail, serving an average 850 clients on a daily basis. Jean and his team continue to travel and learn from the best bars across the globe, learning, creating, and showcasing the rich diversity of Colombia to the world.
